Begin by plugging in the waffle maker. Set out butter to warm. Prepare to warm syrup if desired. Prepare also a large platter as a landing zone for hot waffles, and ready a spatula.
Mix all the dry ingredients together. Separately mix all wet ingredients together, but RESERVE about 1/2 cup milk. Mix the wet and the dry teams together and assess whether you need the additional milk. You want it runnier than pancake batter, but not too runny.
Dose in our waffle maker in 1/4 cup scoops in each of the four quadrants.
Following calcuations assume recipe makes 20 waffles. Per waffle, 126 calories. That means one single square, not one sheet (which is four squares).
We have taken to adding two scoops of Dymatize gourmet vanilla protein powder to the recipe, thus making protein waffles. Protein waffles are 139 calories per SQUARE not SHEET.
We have also successfully substituted the eggs for 1/3 cup plain unsweetened applesauce per egg. These were delicious and vaguely appley in a wonderful way.
Have also substituted the egg for applesauce and the milk for oat milk. 102 cal per square, and hardly distinguishable from the base waffles. They were perhaps a bit more tender, but they didn't taste like oat milk at all! Amazing.
